Bite Magazine columnist, Warren Elwin joins Stacey in the Whānau Living kāuta to make a BBQ Vegetable Salad with Homemade Piccalilli Dressing and his twist on the Banofee Pie – a citrus baked pie topped with caramelized BBQ bananas

Bbq Vege Salad with Piccalilli Dressing by Warren Elwin  
Serves 6 • Prep 15-minutes • Grill 15-minutes

Piccalilli Dressing

1 teaspoon Sugar
1 Tablespoon Red Wine Vinegar
1 Garlic Clove (crushed)
1 Tablespoon Mustard
1 teaspoon Hot Sauce
1 teaspoon Turmeric
1⁄4 teaspoon Salt
Juice of a Lime
Fresh Pepper
75 ml Olive Oil
1 Screw-Top Jar


Place all ingredients in a screw-top jar and shake well. Chill until ready to serve.

Bbq Vege Salad
Handful Green Beans
1⁄2 Head of Cauliflower (plain or coloured)
2-3 Courgettes
1-2 Fennel Bulbs (reserve the green frond)
Handful of Sweet Stem Broccoli
1 Lemon Juice + Zest
Fresh Pepper
2 Tablespoons Olive Oil

Handful Capers
, handful of Fresh Tarragon (or Parsley) Sea Salt
 and Fennel Frond (chopped)


Cut all the vegetables evenly and toss through with lemon juice, zest, fresh pepper, and a big glug of olive oil. Grill over a hot BBQ (use a hot-plate or a fine rack over the grill), keep the moving the vegetables to ensure even colouring, cook until just tender. Remove to a bowl, rest for 5-minutes. Add a few capers, chopped tarragon (or parsley) the fennel frond (chopped), sea salt and toss with enough of the dressing 
to coat well. Serve Warm.

Banaffa Pie by Warren Elwin 
Makes 8 • Prep 25-minutes • Cook 22-minutes

Banana Marinade
6 Bananas
1 Orange (juice & zest)
1 Tablespoon Honey
Small knob Fresh Ginger (grated)
1 Tablespoon Rum


Peel and slice the bananas in half lengthwise, and place in a large bottomed container. Whisk the orange juice & zest, honey, finely grated ginger, and a big splash of rum, 
till smooth. Pour over bananas and leave to marinate for 15-20 minutes.


Place bananas onto a fine wire rack, and place onto the grill of a hot BBQ. Close the lid and cook over a med-low heat until they have just softened and are caramelised underneath (not burnt!). Remove rack from heat, invert bananas onto baking paper, allow to cool, 
then chill slightly.


250 grams Dark Chocolate Digestive Biscuits
100 grams Butter (melted)
1 Lemon (juice & zest)
1 Orange (juice & zest)
2 Limes (juice & zest)
5 Egg Yolks
1 Tin Sweetened Condensed Milk (395 grams)
1 teaspoon Vanilla Essence
300 mls Cream (whipped)
Hint of Icing Sugar
Fresh Berry Compote or Quince Syrup (optional)


Set oven to 170oC. In the food processor crush digestive biscuits. In a bowl mix the biscuit crumbs with 100 grams of melted butter. Press crumb lightly into a 20 cm square cake tin that has a removable base. Bake in the oven for seven minutes then remove and cool. Turn oven down to 150°C.

Place the lemon, lime, orange zest and juice (approximately 3/4 Cup juice) into a bowl.
In a separate mixing bowl, beat egg yolks till pale and thickened. With the beater on, slowly pouring in the tin of sweetened condensed milk, a little at a time, and beat till thick and creamy. Gently fold the citrus juice into the egg yolk mix, taking care not to knock the volume out of it. Pour the mixture onto the pie crust, and bake for 15 mins. Remove and cool the pie, then refrigerate.

Finish the PIE

Neatly arrange the bananas across the top of the pie, then smother in a thick layer of freshly whipped vanilla cream. Chill for a further 10 mins, then grate dark chocolate over the top. To serve, cut into even squares and drizzle with a tart fresh berry compote, or a quince syrup…


“Cooking peeled bananas on a BBQ grill is a delicate process, so we’ve used a finer wire rack placed onto the grill, and not disturbed them until they’re cooked through. Keep an eye on the heat so they don’t burn. You could also use the hot plate.”
